Candy Wonderland Fudge
Let's be honest, the past couple months have been crazy. Between birthdays and holidays, the fridge has been stocked. Now that the craziness is finally settling down, I decided to use up a bit of leftovers with one of my favorite recipes. And by the way, it's also insanely easy!
For this fudge recipe, I used some leftover candy canes, plus some chocolate chips and two tubs of icing that I found in the fridge. It's a perfect way to use up some food that you may not use otherwise. The first thing that I did is place one part chocolate chips and one part chocolate icing in a microwave safe bowl. Make sure that the amount of chips and the amount of icing are about the same. One tub of icing is equal to one bag of chips. Because of my limited supply, I ended up using about half a tub of icing and half a bag of chips. Next, pop it in the microwave until it is fully melted. If needed, stir and put it back in until it forms the consistency of a smooth, thick batter. Pour that into a lined pan. I suggest using parchment paper or tinfoil. Once that was done, I went the extra step and zapped a bit of vanilla icing. If you choose to do this, know that I did not use chips at this point, but you could if you wanted to. If you have vanilla (white chocolate) chips on hand, you could zap those and create a vanilla layer. But once I had my icing melted into a runny consistency, I drizzled it on top of the chocolate layer. Now, for the last step: the candy canes. This is pretty easy and fun! Put your unwrapped candy canes in a sandwich baggie and crush them. You could use a rolling pin if you desire, I used the end of a butter knife. Once they are the size that you want, sprinkle them on top of the fudge, and gently push them in. And that's basically it! Now just allow your fudge to cool and harden for at least 2-3 hours. Leaving it out over night also works perfectly. (Note-putting it in the fridge does help to speed up the process:) Once it is hardened, cut into pieces and serve! This recipe is perfect for the winter time, and for getting rid of holiday leftovers. The combination of one part chips and one part icing is probably the easiest fudge recipe EVER. It's fun to recreate as well, and I will probably be doing that a lot. Enjoy!! Recommended Storage: If you want to keep the fudge hard, it is best to store it in an air-tight container in the fridge.
