Before you begin, heed my warning: these are very rich. It's a lot of sweetness to take in at once, and it may be better to eat only a little bit at a time.
Anyway...
The reason that I have put "whoopie pie" in quotations is because what would normally be the cake part is really made of cookie in this case. Even better, the cookies are cake box cookies-guaranteed to be easy and tasty.
To make the cookie part, you will need any type of chocolate cake mix that you desire (I used triple chocolate fudge with pudding in the mix), two eggs, half a cup of oil (I totally suggest you use canola), and two tablespoons of flour (I usually use white unbleached). If you prefer, you can add chocolate chips just as I did. Combine all of these ingredients in a medium sized bowl and mix until you end up with a chocolate batter. Spoon the batter onto a greased baking pan, leaving each cookie room to expand. Bake in the oven for about twelve minutes at 350 degrees Fahrenheit.

At this point, it's important to give the cookies a decent amount of time to cool off. Even if they are just the slightest bit warm, the icing may not turn out as well as it could. Once the cookies are completely cool, you can add the icing. I personally did not see the point off trying to use a fancy top, but I did use a disposable icing bag-I just snipped off the end. I turned a cookie over, squirted on some icing, and then topped it with another cookie. This is super, super easy and the only advice that'd I give is to add a Goldilocks amount of icing-not too much, but not too little.

Chocolate Cookie "Whoopie Pies"
Ingredients
- Box of chocolate cake mix
- 2 eggs
- 1/2 cup of oil
- 2 tablespoons of flour
- Chocolate chips
- Tub of whipped vanilla icing
Directions
- Combine cake mix, chocolate chips, oil, eggs, and flour in medium sized bowl to create a chocolate batter-like substance
- Spoon batter onto greased pan and bake for 12 minutes at 350 to make the cookies
- Once cookies are completely cool spread icing in between two of them to get the look of the "whoopie pie"
