Mother's Day Lunch, 2017
This Mother's Day, I decided to make a lunch for the "mothers" in my life. I think it's better than jewelry, or anything else that a woman in your life may typically be used to receiving, and it means more to them. So here is the menu that my sister and I created this past Sunday.
Our appetizers were pretty simple, but fun. We set out a display of biscotti's and crackers. The two flavors of biscotti's which we used were Roasted Coconut and Dark Chocolate Almond. The crackers were whole wheat, and happened to be delicious topped with fresh peach jam which I decided to set out, along with some sharp cheddar. Our other dish was a fruit salad. It contained a variety of fruits, including mandarin oranges, strawberries, kiwi, melons, grapes, and a bunch more. We added in lemon juice for freshness, and glazed pecans to give it a sweet crunch.
The first of the two entrees was Roasted Broccoli and Cauliflower with Parmesan and Garlic. It didn't turn out very crispy, probably because of the large amount of oil in the recipe. I also used one/sixth of the amount of garlic which the recipe called for-it would've been a bit much. It was pretty good though, and here is the link to the recipe I used from Pinterest:

The other dish was Lemon Garlic Pasta. I used rotini instead of angel hair, which I believe is the type which is pictured. And once again, I used a lot less garlic-just one clove. This recipe was very good, but I definitely recommend adding more lemon. I didn't find it to be particularly lemon-y. Once again, here is the link:

Lastly is dessert-a.k.a. the best part. I don't actually have any pictures from dessert, but it was Vanilla Bean Gelato, and an Oatmeal Raisin Cookie "Cake". The "cake" was inspired off of this Pin:
I can tell you that mine was much messier and not as picture-perfect, but still delicious.
That was pretty much it for this fun Mother's Day meal, which turned out pretty well. Happy Mother's Day to all of the amazing women out there!
