Epic Cookies 'n Cream Cupcakes

So far, all of the cupcake creations I've tried out have needed improvement after the first trial. I mentioned this in my Layered Lemon Cupcakes. But not this one! This one certainly can be improved, but I've decided not to make any major changes. Cookies 'n Cream cupcakes, are pretty common. But I like to take my own spin on things. ;) And these are pretty epic!



First of all, can we talk about how cute these muffin liners are?! They're white with red and grey bow ties on them. I thought they color-coordinated well with the cupcakes.:)) Anyway, these cupcakes are awesome! Each part of the cupcake kind of represents the Oreo cookie in a different way (which sounds weird). The base is a crunchy Oreo cookie crust, topped with a layer of chocolate cake. The cake is then pumped with a Oreo cream filling, then topped with vanilla frosting and Oreo cookie garnish.




To make this type of crust, I usually scrape out the cream and just toss it. But in this case, I decided to use it to make a filling which imitates that of an Oreo.



Sometimes extra batter is inevitable, but I decided to use it this time. I made some heart-shaped cakes using pans similar to these, then I pumped on some extra vanilla frosting and topped 'em with cookie crumbs and sugar sprinkles.




This made two dozen cupcakes, which I took most of to a party. Baking for events is the best! But baking for you is pretty cool too.:)



When I have lots of cupcakes to decorate, I like to try different tips and designs. It's fun and helps me to figure out what works and what doesn't, and what looks the best.



I got a can of whipped fluffy white frosting at the store and it's super good. I also used a vanilla frosting I had made a couple of days before and had plenty of. One can of frosting does not cover two dozen cupcakes!!😬

Epic Cookies 'n Cream Cupcakes


Ingredients

  • Box of 36 Oreo cookies
  • 4 Tbs melted butter
  • 1/4 cup sugar
  • Your favorite chocolate cake
  • 2 spoonfuls powdered sugar
  • 1 tsp vanilla
  • 1-2 tsp water
  • Your favorite vanilla frosting

Directions

  1. To make the crust-crush Oreos to make one cup of cookie crumbs. *This is about 16 Oreos.* Make sure to scrape out the cream and set it to the side.
  2. Mix crumbs with sugar, then stir in melted butter to get a soft, crumbly mixture.
  3. Line two muffin pans with muffin liners. Press about a spoonful of crust mixture into the bottom of each liner, then bake them for about 5 minutes at 350 degrees.
  4. Top your cooled crust with your favorite chocolate cake batter, and bake for however long your recipe calls for.
  5. To make the cream filling-While your cupcakes are cooling, pull out the cream that you set aside, and place it in a small mixing bowl. I found that the cream of 16 cookies was not enough, so we'll use the cream of 30 cookies. Add your powdered sugar, vanilla and water, and beat. The mixture should be smooth, soft, not too thin and not too thick. Adjust the amount of water you add as needed.
  6. Punch the broad end of an icing tip into your cooled cupcakes to create a well for the filling. Spoon a bit of the filling into the cupcake and cover the hole with the cake which was taken out.



7. Pipe on your vanilla frosting and decorate with Oreo cookies. (After using the cream of 30 cookies, I had six whole Oreos left. I broke each of those in half and topped each of my first dozen cupcakes with a half a cookie. For my other dozen cupcakes, I used the crumbs of the other cookies which I had scraped the cream out of for the filling. It's complicated!😖)
