Peanut Butter Chocolate Chip Cookie Cake
In order to control the amount of sweets in the house, I try to plan lots of my baking around social events. That means parties, barbecues, celebrations, get-togethers, potlucks, and birthdays. My "Second Mama" had a birthday around the beginning of August, and I decided that since we would be making a day out of it, I should be making a dessert for it.
When it comes to birthdays and someone doesn't like cakes or pies, you gotta think outside the box. I could've, of course, made cookies or brownies, but what I wanted to do was make a cake. So I made a cookie cake, using her two favorite cookie flavors: chocolate chip and peanut butter. Aah!
Three layers of dense chocolate chip cookie with some pb chips stuffed inside, chocolate buttercream lied out between, and a peanut butter drizzle on top. Yes, please! Pipe some more buttercream on top and add some funky candles, and you've got it. :)))
Surprisingly, this isn't really too hard. It took me about an hour to put together the dough and to bake the cookies, then maybe another half an hour to put the whole thing together and decorate it.
And yes, that is wax that melted off of the candles on top. I guess it adds a pop of color??
If you have the time, you could make your own buttercream. Originally, I had planned on doing just that. But I happened to run short on time, and I happened to have an unopened can of chocolate buttercream downstairs.

Peanut Butter Chocolate Chip Cookie Cake
Ingredients
- 1.5 cup brown sugar
- 1.5 cup softened butter
- 1/2 cup sugar
- 2 eggs
- 4 tsp vanilla extract
- 4 cups flour
- 4 tsp cornstarch
- 2 tsp baking soda
- As many chocolate and peanut butter chips as you'd like!
- Your favorite chocolate buttercream
- 1/2 cup peanut butter chips
- 2 tsp coconut oil
Directions
- I can't take credit for the cookie layers, because I just doubled the "Classic Chocolate Chip Cookie" part of this recipe...
- Beat together sugars and butter until fluffy, for several minutes.
- Mix in vanilla and eggs, followed by your flour, cornstarch and baking soda.
- Stir in peanut butter and chocolate chips, resulting in a thick, dense dough.
- You should be able to separate and spread your dough out into three 8-9 inch pans.
- Bake for 18-20 minutes at 350 degrees.
- After your cakes have cooled, remove them from the pans. Spread some chocolate buttercream on top of one of the layers, top with another cookie layer, another buttercream layer, then your final cookie layer.
- Put coconut oil and pb chips in a microwave safe bowl, melting for 10 seconds at a time until smooth, thin and creamy.
- Using a piping or plastic bag, drizzle peanut butter drizzle on cake however you like.
- Decorate with more chocolate buttercream-I used Wilton 1M for the larger dollops and Wilton 129 for the small ones, topping the larger ones with pb chips and adding some funky candles in the middle.
- Slice, and dig in!😊
