Three Easy Unique "Whoopie Pie" Combinations

Cake Box Cookies are definitely one of the easiest cookies to make, and one of my favorites. They're actually the first cookies I made as a "baker"! I've also used them in previous recipes, here and here. I'm about to show (and tell you about) three unique and easy flavor combos which you can use to make some "whoopie pies" out of cake box cookies. Let's get into it!




Honestly, I hate to go a week without baking, so I brought some baking supplies to the beach. But of course then I couldn't get eggs until the week was almost over, so I didn't end up baking. But what I brought was supplies to make these babies! These are super easy and quick, but fun as well. Perfect for when you're desperate to bake away from home.




I created three flavor combos - carrot cake with cream cheese frosting, chocolate with caramel frosting, and coconut with chocolate hazelnut frosting. That last one is kind of weird, I know. It was basically coconut with nutella, but it was actually pretty good.




I've seen a couple similar ideas on Instagram recently too. You could do funfetti, peanut butter chocolate, red velvet and cream cheese...the list goes on and on. And the kids will gobble them up!



Cake box cookies are super easy to make as well. All you need is a box of cake mix, flour, eggs and oil. You can add in any topping you like to the mix as well. They're great for baking on a time crunch!



I topped the carrot cake with some walnuts, and put chocolate chips in the chocolate cookie. These are both easy additions that bring the cookies up a notch!

Three Easy Unique "Whoopie Pie" Combinations


Ingredients

  • Box of carrot cake mix
  • 2 eggs
  • 1/2 cup oil
  • 2 Tbs flour
  • 1/2 cup chopped walnuts
  • Tub of cream cheese frosting

  • Box of chocolate cake mix
  • 2 eggs
  • 1/2 cup oil
  • 2 Tbs flour
  • 1 cup chocolate chips
  • Tub of caramel frosting

  • Box of coconut cake mix
  • 2 eggs
  • 1/2 cup oil
  • 2 Tbs flour
  • Tub of chocolate hazelnut frosting

Directions


  1. Mix together eggs, oil, cake mix and flour. For chocolate cookies, mix in chocolate chips.
  2. Grease baking pans and top with Tbs-sized balls of dough. For carrot cookies, gently top half of your cookies with chopped walnuts. 
  3. Bake for about 12 minutes at 350.
  4. Let cookies cool completely.
  5. Use a sandwich or icing bag to frost half of the cookies. Top frosted cookie with non-frosted cookie. For carrot-walnut, top non-walnut garnished cookie with walnut garnished cookie.
  6. Serve and enjoy!!
