Fall Spice Oatmeal (vegan + oil-free)
I hope you all had a lovely Thanksgiving! Personally, I think that one of the best parts about Thanksgiving is the leftovers. There's normally a lot. And if you're like me, you might have leftover pumpkin too. So here's an oatmeal recipe (that I actually made Thanksgiving morning) that uses not only pumpkin, but a bunch of other fall spices too.
Breakfast is the most important meal of the day! As I've gotten older I've learned that this isn't just cheesy - it's true! Actually, breakfast doesn't even hold me over until lunch. I get hungry even with breakfast. But there was a time last school year when I had oatmeal almost every morning for a few weeks straight. I found that it's probably the most filling breakfast out there. It's comforting too, and you can do so much with it and add so much to it. :))
For this recipe, I added a bunch of fall spices - cinnamon, nutmeg, apple pie spice, ginger, etc. I also kept it vegan by using water instead of milk, which I know is sometimes used in oatmeal.
This recipe takes very little time to make and is very fall-y tasting. The pumpkin brings in some sweetness and balances out the strength of the spices. I've also put in brown sugar to add density and sweetness and bring out the flavors.

Vegan Fall Spice Oatmeal
Ingredients
- 1 cup of water
- 1/2 cup oats
- 3 Tbs pumpkin puree
- 2 Tbs packed brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp apple pie spice + pinch of ginger (or just 1/2 tsp pumpkin pie spice)
- Pinch of nutmeg
- Pecans *optional*
Directions
- Bring water to a boil over medium heat, then lower heat a bit and add in the oats, stirring frequently.
- When the oats soften, take your pot off of the heat and drain excess water.
- Mix in spices, brown sugar and pumpkin until combined.
- Pour into a bowl and top with pecans or any other topping which you like.
- Enjoy your easy, yummy oatmeal! (Serves one)
