S'mores Truffles
Love chocolate chip cookies? Try these too. They're dangerously amazing!
A chocolate cake interior with a mini marshmallow in the middle, covered in chocolate and rolled in graham cracker crumbs. It's a semi-less messy s'more! These truffles are the perfect bite-size sweet, especially perfect for when you don't have a bonfire on hand to make s'mores.
The trick to making perfect cake pops - simply add a stick to these to make them cake pops :) - is to make the cake just moist enough. It shouldn't be crumbly and dry, but it shouldn't be soggy either. So we're adding just three tablespoons of frosting to our cake. I added vanilla because that's what I had. Chocolate would be best, but either way, the flavor isn't effected.
Putting these together is pretty easy and fun. Roll your truffles in the melted chocolate (or use this tool), then spoon them over to the graham cracker crumbs and roll them around until covered. The graham cracker is what really brings the whole thing together and makes it taste like a s'more. 😋
You can use any recipe of cake and frosting you want. I used a box cake mix and some frosting I had leftover. My main goal was to capture the essence of the s'more, but you can make the cake and frosting from scratch if you really want to dive into it. I love this chocolate cake recipe.
If you want to make these into cake pops, simply pierce them with a cake pop stick before dipping them. You can stick them into cardboard to let them stand up and dry as well, or use something like this.

S'mores Truffles
Makes about 37 truffles
Ingredients
- 2 single layers of chocolate cake - that's how much one average box mix will make
- 3 Tbs frosting - either vanilla or chocolate, it won't effect the flavor
- About 37 mini marshmallows
- 2-2.5 cups melted chocolate *Note: 2 cups of solid chocolate will reduce when melted
- 8-9 graham crackers, crushed
Directions
- Make cakes and let cool completely before breaking into crumbs.
- Mix frosting into cake until the cake is solid and can be shaped.
- Roll cake into Tbs sized balls, push a marshmallow into the middle, cover and roll until smooth. Repeat this process until your cake is all used up.
- Melt your chocolate. I suggest stirring between 30 sec. intervals, stopping when smooth. Dunk the truffles into the melted chocolate, making sure to cover all sides.
- Crush your graham crackers. Put them in a plastic baggie and use a butter knife or rolling pin to crush them, or pulse in a food processor. Spoon truffles into crushed graham crackers and cover, then set out the finished truffles to dry.
- I recommend putting the truffles in the fridge to set the chocolate completely.
