3 Smoothies (vegan)

Today isn't dessert, but it's still just as fun and yummy! Instead, we have 3 vegan smoothies - just in time for the warm weather coming. These are all different. We have a delicious berry smoothie, a creamy green smoothie, and a thicker dessert-like one.





Deep Berry Smoothie


I love the color of this one! This Deep Berry smoothie is pretty sweet, but still healthy. A perfect breakfast treat. 💗🍓




Ingredients:

  • 1 cup strawberries cubed, fresh or frozen and thawed
  • 1 cup blueberries, frozen or fresh
  • 1/2 cup plant-based berry yogurt (I used So Delicious raspberry coconut milk yogurt)
  • 1 Tbs chia seeds
  • Splash of plant-based milk
  • Ice cubes if needed

Blend together your first three ingredients until smooth, then add the others, blend and serve.




Go Green Smoothie


This one has a nice tropical fruit base, with the addition of kale to create a creamy texture and add more nutrients and color. Super refreshing!🍍🌿




Ingredients:

  • 1/2 cup + 1 Tbs of crushed or chopped pineapple
  • 1 kiwi
  • 1 banana
  • Small handful of kale (I used baby kale, which is lighter)
  • 1 Tbs water
  • 1 Tbs pineapple juice (Convenient if you're using canned pineapple)
  • 2-3 ice cubes


Blend together your first four ingredients until they are relatively smooth, it may be a bit chunky. Then add the others and finish blending until creamy. I love the kiwi seeds dotted throughout:))



Chocolate Peanut Butter Banana Smoothie


This last one is definitely more of a dessert, but still relatively healthy. Creamy frozen bananas with the addition of cocoa and pb makes a sweet snack!🍌🍫





Ingredients:

  • 2 frozen bananas
  • 1 Tbs peanut butter
  • 2 Tbs cocoa powder
  • Ice cubes (optional)




Blend your bananas until they form a creamy ice cream-like consistency. This may take a bit, so be patient. It also may work better in a food processor than a blender. Once the bananas are smooth, add the pb and cocoa, then blend to make a deep brown color. Add more cocoa if you find the pb overwhelming. Scoop out and serve! I ended up making a gorgeous smoothie bowl out of this, with banana slices, chocolate and chia granola, a chocolate bar and softened peanut butter. You can of course drink it, but I found it thick enough to do something else. So pretty and delicious!!
