Simple Chocolate Buttercream (vegan)
Short post coming for you! This recipe is a staple in the kitchen, especially when it comes to cakes and cupcakes. Vegan chocolate buttercream! With pretty simple ingredients which you hopefully have on hand, this recipe will become a go-to.
For my Chocolate Bunny Cake recipe this past Easter, I used a dark chocolate avocado frosting recipe from Veggie Primer. SO. GOOD. But I understand that not everyone loves such dark chocolate. So for this recipe of my own, I decided to go more neutral and tone it down a little. I made this frosting a bit lighter while still keeping it nice and rich.
I've always been a little nervous when approaching buttercream. A bunch of the time it's wayy too sweet and makes your teeth hurt, or sometimes it isn't intense enough or doesn't have a unique flavor. Making it vegan is a whole other battle. No heavy cream, no meringue powder, and, of course, no butter. The secret ingredient for success? Avocado.
With such a lovely texture and an already subtle flavor which can easily be covered up by cocoa/cacao powder, avocado is perfect. But to tone this recipe down a bit, I used half avocado and half vegan butter. So, you could use all avocado or all vegan butter too. But the avocado really makes the buttercream super smooth, and a bit healthier ;)
Gather up your (simple) ingredients and try this recipe out. No beater needed! I've used it on top of cupcakes, have dipped graham crackers in it, and just made a cookie sandwich with it. Enjoy..Stay humble, creative, and kind!❤

Simple Vegan Chocolate Buttercream
Enough to frost about 24 cupcakes/1 full nine inch cake layer
Ingredients
- 1/2 cup of mashed avocado (about 1 avocado's worth)
- 1/2 cup softened vegan butter
- 1 cup cocoa/cacao powder
- 1/4 cup plant milk
- 1 1/3 cups powdered sugar
- 1 tsp vanilla extract
- 1 Tbs agave (or honey if in diet)
- salt to taste
Directions
- Mash the avocado against the side of a bowl with a fork, then mash in the softened butter until everything is smooth and light green.
- Gently mash/stir in the cocoa/cacao powder. The mixture will be super thick, but it will come together.
- Stir in the vegan milk gently, a bit at a time if needed. Once it is smooth, add in the powdered sugar 2/3 a cup at a time, stirring until it is combined.
- Add in the vanilla and agave, stirring throughout. Then add pinch(es) of salt to taste - this all depends on how sweet you want the frosting to be.
- Chill the buttercream in the fridge uncovered for about an hour. Use as a dip, topping, or a meal as itself. Happy baking!!
