Raw Granola and Cookies (vegan + oil-free)

It's time for a super simple recipe! Introducing raw granola. Just as awesome as baked granola, but much easier, with a cookie dough-type chewiness to it! Three ingredients later, you've got an awesome snack.







I was originally inspired to make rawnola (raw granola) when I watched Ashley Wicka make it in one of her videos. I had never heard of it at the time, and I was super intrigued. So I went and found a recipe from Minimalist Baker, and personalized it a bit. My parents particularly love it, specifically paired with fruit salad and/or yogurt. It's a hit in my household!




This is super easy, and done within a matter of minutes. You could mash it by hand of course, but I totally recommend a food processor. It gets the job done super quick. So, that makes this a great recipe to use during meal prep! Great to put in smoothie bowls, nice cream, fruit salad, yogurt, oatmeal, cereal, anything really. 




As for the three ingredients, they're super simple, and hopefully you already have them at home - oats, dried dates, and maple syrup. Something I also like to add is walnuts. They do make the granola more crumbly, not as soft and chewy. But they add a bit of crunch, and some extra protein. I've tried adding almonds instead, and I think walnuts are much better. Maybe pecans would be good too! It's all about experimenting :))




I have also made cookies out of this granola. If you choose to bake them, they're not raw of course. But I assume that they can just be chilled as well. What I did find is that they're not as sweet when they're baked, and have more of a cracker-like flavor. They're perfect if you like simple breakfast cookies for the go (detailed directions below)! I suggest trying it out and finding what's best. I personally prefer just the rawnola, but I thought I'd add this extra bit of fun in today.

Raw Granola (and cookies)

Makes about 1 cup rawnola or 7 cookies


Ingredients

  • 1/2 cup of oats (preferably rolled or old fashioned)
  • About 12 pitted dates
  • 1/4 Tbs maple syrup
  • 1/4 cup walnuts (optional)

Directions

  1. To make the raw granola add the oats and 4 of the dates into a food processor. Blend until the dates are chopped throughout. Continue to add the rest of the dates 4 at a time, blending each time. 
  2. Add in the maple syrup, and blend it all up. At this point, the granola should be soft, and a bit crumbly (pictures above). Depending on your dates, you may need to add a few more or add more oats if it's too soft. It's all based on your judgement and preference!
  3. To make the cookies preheat the oven to 350 degrees. Skip the addition of walnuts to the granola. Roll out tablespoon size balls with your hands, then place them on a baking sheet (doesn't need to be lined or greased) and flatten them a bit using the palm of your hand.
  4. Bake them for 10 minutes, then let them cool for at least 15.
  5. If you want to keep the cookies raw, you can mold them and then chill them in the fridge. I personally haven't tried this, but I know the cookies will turn out sweeter if they're not baked! 
  6. Store both the cookies and rawnola in an air tight container in the fridge. Enjoy!!
