Banana Almond Spice Cookies (vegan + oil-free)

This cookie is the taste of fall in one bite! No pumpkin though, sorry. 😮 You'll love it nevertheless! Banana, a dash of cinnamon, and a base of almond butter make for a lovely warm taste.






 It's the second day of cookie challenge week, and it's another oil-free recipe! Instead of vegan butter, these cookies have a base of almond butter. This makes them smooth and chewy. The best texture! And the cinnamon sugar they're rolled in is just the icing on the cake.





This dough is super easy to put together. Only ten ingredients, one bowl, and no chilling. Just roll in cinnamon sugar and bake! The best recipes are the quick ones, and this one is definitely that. A simple recipe that makes for a great crowd-pleaser.

Banana Almond Spice Cookies

Makes about 30 cookies



Ingredients


  • 1/2 cup of almond butter
  • 1 cup brown sugar
  • 1/3 cup mashed banana (about 2/3 of a banana)
  • 2 Tbs plant milk
  • 3/4 tsp vanilla
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 2 cups flour
  • 1 cup cinnamon sugar


Directions


  1. Preheat the oven to 350 degrees.
  2. On medium speed, beat together the almond butter and brown sugar. It may turn out a bit crumbly, but that's okay if it does.
  3. Add the banana, milk, and vanilla, and beat on medium until everything is smooth and combined.
  4. Pour in the baking soda, salt, cinnamon, and one cup of the flour, and beat on low speed until it all comes together.
  5. Finally, beat in the remaining cup of flour and let all of the ingredients come together smoothly to form the dough.
  6. Roll the dough into 1.5 Tbs-sized balls (the dough may be a bit sticky, but it should be workable). Roll the dough in the bowl of cinnamon sugar to coat each ball. Place the cookies on cookie sheets (they don't need to be lined or greased).
  7. Bake the cookies for 10-12 minutes. Allow them to completely cool, then use a spatula to scrape them off the pan (I've been decreasing my use of oil to grease things - they'll often come off with just a spatula!).
