Bomb 6 Ingredient Peanut Butter Cookies (vegan + oil-free)
This is one of those accidentally infreakingcredible recipes. Only SIX ingredients, completely oil-free, and vegan (of course). Seriously super easy and quick to make, and you'll thank me when you take a bite.
I made a peanut butter and chocolate skillet cookie for my friend a few weeks ago, and then I was inspired to make a peanut butter cookie. The first trial following the skillet cookie was basically a standard cookie recipe. But for the second try, I decided to drop the butter and go for an oil-free version. And in the end, I had a pretty healthy and AMAZING peanut butter cookie.
So what are the six ingredients? Peanut butter, brown sugar, vanilla, mylk, maple syrup, and flour. I literally put this together in 5 minutes. Every delicious cookie should be that easy! Peanut butter acts as the oil/butter, plus contributes it's fabulous flavor. And I ended up finding no need for baking soda. So, so simple. :)
The cute, crinkled edges are a great touch to this cookie's simple look. But as shown above, these cookies go in the oven still round. After about 10 minutes, I decided to gently push the tops down with a spoon to give them a more interesting look. Then I baked the cookies for a few more minutes, and they came out looking great!
As I mentioned before, these taste awesome. They're moist *sorry* and chewy on the inside. Both my mom and my dad said they are the best peanut butter cookies they have ever had. I can't say enough about them. They're not crumbly like my skillet cookie was, and the ingredients are awesome. They're practically perfect!!!

Bomb 6 Ingredient Peanut Butter Cookies
Makes 12-13 cookies
Ingredients
- 2/3 cup of peanut butter
- 2/3 cup light brown sugar
- 3 Tbs maple syrup
- 1 Tbs plant milk
- 1/2 tsp vanilla
- 1/2 cup flour
Directions
- Preheat the oven to 350 degrees.
- Use a rubber spatula or spoon to mix the peanut butter and brown sugar together until thoroughly combined.
- Gently fold in the milk, syrup, and vanilla to create a smooth dough.
- Lastly, add in the flour and stir until the dough comes together completely.
- Roll the dough into balls about 1.5 Tbs in size, and space them out on non-greased cookie sheets. Press down the tops to flatten them out a bit. Use a fork to make cross designs on the top if you'd like. Bake for 10-12 minutes.
- Allow the cookies to cool for at least 10 minutes, and enjoy!!
