PB&J Bliss Balls (vegan +oil-free)
Soooo this isn't really a "cookie" but I'm counting it as one! Kind of like a no-bake cookie? Anyway, it's peanut butter and jelly - not much that's better than PB&J. And better yet, it's bite sized. 😍
Simple, easy, vegan, raw, oil-free, yummy..so many great things! The best is that you only need 4 ingredients. Oats, peanut butter, jelly, and vegan milk. All you'll need to do is mix it all up in a food processor, then stick it in the fridge.
Even though I haven't had very many, I know that bliss balls are awesome because 1) they are super easy and simple to make and 2) they're healthy, yummy, and vegan all at the same time. My first recipe of the week was also bliss balls, and they were a big hit. Bliss balls are also so customizable! Which flavors should I do next??
I feel like there isn't much to say about bliss balls. They're such a simple, self-explanatory treat. Something you should definitely try if you haven't already!
I think you'll enjoy these guys! They're thick, and peanut butter-y, with a hint of fresh fruit preserves. It's basically peanut butter cookie dough, but pretty healthy. ;) Be sure to check out the rest of this year's cookie challenge!
PB&J Bliss Balls
Makes 14-15 bliss balls
Ingredients
- 1 3/4 cup of old fashioned/rolled oats (quick oats may work too)
- 1/3 cup smooth peanut butter
- 1/4 cup jam/jelly of choice (I used raspberry preserves)
- 1 Tbs vegan milk
Directions
- Pour all four of the ingredients into a food processor, and blend. The mixture should fall into soft crumbles (photo above) that will come together when you press them between you fingers.
- Press the mixture into a bowl so that it is compact and flat, and chill in the fridge for one hour.
- Scoop and roll the chilled "dough" into balls 1.5 Tbs in size, and store in an air-tight container in the fridge when complete.
