Peanut Butter Chocolate Chip Mini Waffles (vegan + oil-free)

So I got a Dash mini waffle maker for Christmas, and I decided to try it out on the morning of New Year's Eve. My first creation was peanut butter chocolate chip waffles - they're easy, they have pretty simple ingredients, and here's the recipe.



By the way, look at how cute they are! You may not be able to tell from this picture, but they're pretty small - about the size of a little frozen toaster waffle. But these guys are made from scratch! I hope you enjoy them, and I'll be experimenting with new flavors soon. 😊






Peanut Butter Chocolate Chip Mini Waffles

Makes about 9 mini waffles but recipe works for any size


Ingredients



  • 1 cup flour
  • 1 Tbs sugar
  • 2 tsp baking powder
  • 1 flax egg (1 Tbs flax seed + 3 Tbs water, let sit and thicken for 10-15 min)
  • 1 cup plant milk
  • 1/2 cup smooth peanut butter
  • 1/2 - 3/4 cup choc chips

Directions

  1. Mix the flour, sugar and baking powder together. 
  2. Then stir in the milk, peanut butter and “egg”. Once the mixture is smooth and complete, mix in the choc chips. 
  3. For the mini waffles, I used 1/4 cup batter for each waffle. Follow the directions for your size waffles or estimate. Cook until they start to turn golden.
