Lemon Poppy Seed Baked Donuts (vegan + oil-free)

It's been a whiiiile since I've posted a recipe! I'm starting off the summer with these super easy, cute, and satisfying lemon poppy seed donuts. This is my first original donut recipe, and I'm super excited about the flavor!






On Easter morning, I made lemon poppy seed muffins by Rachel of bakerita.com. They inspired me to incorporate this flavor into some kind of baked good, and that ended up being baked donuts. These guys are filled with lemon juice, lemon zest, poppy seeds, and topped with a simple sugar glaze. The flavor is minimalistic, but sweet, and perfect for the spring/summer season. 




Baked donuts are basically muffins, but in a way, they're more fun. Like a muffin, they're not as moist as cake, but they are bouncy and soft. Unlike a muffin, they're usually circular (duh), and can be more customizable. So I'm excited to explore some more flavors soon! 





I topped these with a royal icing glaze. On top of that you could add some more poppy seeds, but I like the look of just the glaze -it's a clean finish. 





Instead of milk, eggs, and butter, the wet ingredients for this recipe include apple sauce, plant milk, and a flax egg (mix of water and flax meal). These kind of substitutes are pretty simple, and that's the amazing thing about veganism - you can create delicious foods out of fruits, nuts and seeds. That's better not only for the animals and the environment, but for our health.

Lemon Poppy Seed Baked Donuts

Makes 24 donuts



Ingredients
For the donuts
  • 3-1/2 cups of flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1-1/2 Tbs poppy seeds
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup plant based milk
  • 2 Tbs apple sauce
  • 1 tsp vanilla extract
  • 1/2 cup lemon juice (2-3 lemons)
  • 3 Tbs lemon zest
  • Flax egg (1 Tbs flax + 2-1/2 Tbs water, mixed and allowed to sit for 10+ mins)
For the glaze
  • 1-1/2 cups powdered sugar
  • 1-2 Tbs water

Directions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, combine the flour, baking soda, powder, poppy seeds and salt.
  3. In a separate bowl, stir together the sugars, milk, applesauce and vanilla. Next, incorporate the lemon zest and juice. Lastly, add in the set flax "egg". 
  4. Pour half of the wet ingredients into the bowl of dry ingredients and stir completely. Then stir in the other half to create a batter.
  5. Spoon the batter into greased donut pans, about 1/2-2/3 of the way (the donuts don't rise much). 
  6. Bake the donuts for 10-12 minutes, until they curl away from the sides of the mold (pictured above) and are baked completely.
  7. Combine the water and powdered sugar to create the glaze, and drizzle on top of the cooled donuts. Enjoy!!
