Blueberry Streusel Baked Donuts (vegan)

Today I'm sharing another baked donut recipe. Not only is this recipe super super easy, but it's delicious and makes for an amazing breakfast inspired treat!





The base of this donut is vanilla, filled with blueberries, and topped with a cinnamon oat crumble. They're especially amazing the day that they're baked (I ate 3!). 




The dry ingredients are super simple - flour, baking soda and powder, and salt. The wet ingredients aren't too complicated either - white sugar, brown sugar, plant milk, applesauce, vanilla, and a flax egg. Then the blueberries are folded in, and the crumble is placed on top. I'm super happy with how these came out, and I really hope you'll give them a try! They're quick, fun, and satisfying.

Blueberry Streusel Baked Donuts`

Makes 16 donuts


Ingredients

For the donuts
  • 3 cups of flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1 flax egg (1 Tbs flax + 2.5 Tbs water, mixed and allowed to set)
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup plant milk
  • 1/4 cup applesauce
  • 1 tsp vanilla
  • 1 cup fresh or frozen (thawed) blueberries
For the crumble
  • 1/4 cup + 1 Tbs vegan butter, soft
  • 1/4 cup brown sugar
  • 1/2 cup oats
  • 1 cup flour
  • 1 tsp cinnamon
Directions

  1. Preheat the oven to 350 degrees F and grease donut pans. Set aside.
  2. In a medium sized bowl, mix together the ingredients for the crumble topping. You may need to use your hands to fully incorporate the butter. It should resemble a crumbly cookie dough.
  3. In a large mixing bowl, combine the flour, baking powder, soda and salt. Set aside.
  4. In a separate mixing bowl, combine the sugars, milk and applesauce. Once mixed, add in the vanilla and then the set flax "egg".
  5. Pour the wet ingredients into the dry ingredients, and stir until fully combined. Fold in the blueberries gently.
  6. Fill the donuts pans with the blueberry batter, most of the way full. Sprinkle each donut with a handful of the crumble topping. 
  7. There will most likely be extra topping. You could use it for something else, or if you're like me, eat some of it ;)
  8. Bake the donuts for about 12 minutes. The edges should curl away from the mold and the top should rise.
  9. Allow the donuts to cool, and enjoy!
