5 Summer Themed Sugar Cookies (vegan)

Even though we're into the last month of summer, we can celebrate the fact that there's still time before school starts! Over the past month, I've decorated a LOT of sugar cookies, and now I'm compiling them into a festive summer post. These are all pretty simple and don't require super fancy tools. I suggest looking at this post to see my vegan sugar cookie recipe, royal icing recipe, and my favorite tools. :))


1) Donuts




Really these are appropriate all year round, but I want to include them because they're easy and so adorable. To create the shape, I used a normal circle cookie cutter and I used an icing tip to cut out the middle circle. (Grab my vegan sugar cookie recipe here!) In the picture, you can see that I did a base of beige royal icing to act as the donut. Once that dried, I added a curvier layer of colored icing to act as, well, the icing. I added some vegan sprinkles to my pink and chocolate donuts, and a blue drizzle to my white ones. By the way, to color the brown icing, I used cocoa and some extra water instead of any food gels. It's easier and tastes better!


2) Fruit




The next one is fruit - more specifically, watermelon, kiwi, and strawberries. For the watermelon slices, I used a large circle cookie cutter, cut that circle in half, and then used the edge of a lacey cookie cutter to make a bite mark as shown above. In terms of decorating, I made the rind with a stripe of green and then a stripe of white. I filled the rest with pink, and then once that dried, I added little dashes of black icing to act as the seeds. (To make black frosting, I suggest creating a brown color with cocoa, and then adding a little bit of black food gel instead of having to use a lot of it.) For the kiwi slices, I used a circular cookie cutter of course. To decorate them, I filled all but the very middle with green icing, then added a middle circle of lighter green icing, which I spread outwards using this pick tool (you can use a toothpick as well). Once that all dried, I added black dots to act as the seeds. These were a big hit! For the strawberries, I used a heart shape cookie cutter. I added two green ovals at the top to act as the leaves, then filled the rest with pink. Before the pink dried, I used a toothpick to add little swipes of white icing to look like the seeds. All three of these ideas are so so cute and I highly recommend that you try them!


3) Burger Ingredients





So this one is a bit more extensive. For burger "ingredients", I did burgers, buns, tomatoes, cheese, lettuce and pickles. (Inspired by this pin!) The burgers are chocolate icing topped with rough black stripes to look like grill marks. The buns have a light sandy colored icing and are topped with chia seeds to act as the sesame seeds. The cheese slices are little squares topped with a mustard-y yellow color. For the pickles, I used a small circle. I outlined it with a dark green wave, filled it with a lighter green and topped it with some dark green stripes. The lettuce is just one shade of green on top of a star-like shape. The tomato is a small circle as well. The base is a light red, and I made darker red stripes going from the center outward with a toothpick. For the seeds, I used small yellow sprinkles. These are time consuming, I'll admit, but they're adorable and super fitting for a summer party.🌴


4) Citrus Slices


Okay so these guys are pretty intricate, but they're worth it because people love them! I used this pin as a guide, but basically I started with a colored rim, then did a white wheel-like outline, then filled in the rest with more colored icing. Extra fun tip: I added lemon extract to the yellow icing and orange extract to the orange icing. It's a fun surprise!


5) Popsicles



These are probably some of my favorite sugar cookies I've ever made! They're super fun, clever, and versatile. I used a rounded rectangular tupperware container to get the popsicle shape. Before baking them, I pressed a popsicle stick into the tops, then covered them with a little more cookie dough. From left to right: I did one with different colors and corresponding sprinkles, then a purple-ish one with a chocolate "fudge" drip, and on the right is a watermelon-inspired designs with mini chocolate chips acting as the seeds.
