Chai Spice Cookies (vegan)
It's the first day of Cookie Challenge week! To be honest, I'm not completely sure how smoothly this week is going to go - it's a work in progress. But I'm excited anyhow! Today's cookies are chai inspired and are the perfect way to start the fall recipe season.🍁
Cinnamon, nutmeg, ginger and cloves create the palette for this Autumn-esque flavor. Chai was my original intention, but these cookies could also be called spice cookies. Either way, they're super delicious and easy!
I decided to add some decorative sugar to the top of my cookies, which is totally optional. You could also add some extra spices instead. If not, the natural cracked look on the cookie gives it some unique character on its own.

Chai Spice Cookies
Ingredients
- 3/4 cup of vegan butter
- 3/4 cup light brown sugar
- 1/4 cup smooth almond butter
- 2 Tbs maple syrup
- 1/2 tsp vanilla
- 1.5 tsp cinnamon
- 3/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp cloves
- 1 tsp baking soda
- 1/2 tsp salt
- 1-2/3 + 2 Tbs flour
Directions
- Preheat the oven to 350 degrees.
- In a medium bowl, beat together the butter and sugar. Once combined and smooth, beat in the almond butter until fully incorporated.
- Add in the syrup and vanilla and beat into the mixture.
- Put in one cup of your flour, plus the baking soda, salt, and spices. Beat all of this into the mixture of wet ingredients. Scrape down the sides of the bowl if need be.
- Lastly, add in the rest of the flour and beat until everything is super smooth and even.
- Roll the cookie dough into about 1.5 tbs sized balls, and space out on cookie sheets. Top with sprinkles of sugar or spices if you prefer.
- Bake the cookies for 12-14 minutes, and allow at least 5-10 minutes to cool. Enjoy!
