Chocolate Chip Cookie Dough Bites (oil-free + vegan)
Welcome to day two of cookie challenge! Yesterday's recipe was chai spice cookies, which you can find here. Today is totally different - chocolate chip cookie dough bites! This are sooooo good y'all. Plus there's only six simple, pretty healthy ingredients. Let's dive right in!
These cookie bites have a base like raw granola (which I recommend looking at) - dates and oats. The other four ingredients are syrup, brown sugar, plant milk, and chocolate chips (duh). AKA, these aren't too bad for you.
90% of this is made in a food processor, which makes the prep time no problem at all. The only thing that really takes much time is the cooling process, which I recommend doing over night.

Chocolate Chip Cookie Dough Bites
Makes 10-12 bites
Ingredients
- About 12 pitted dates
- 1/2 cup of rolled oats
- 3 Tbs maple syrup
- 1/2 cup light brown sugar
- 1/2 Tbs plant milk
- 1/3 cup chocolate chips
Directions
- In a food processor, pulse together the dates and rolled oats until combined and slightly sticky. Then blend in the syrup to smooth out the texture.
- Blend in the brown sugar and milk, scraping down the sides as needed. It will be thick and sticky.
- Remove the mixture from the food processor and place in a small mixing bowl. Then use a beater or wooden spoon to mix in the chocolate chips.
- Roll the dough into bite sizes, about 1.5 Tbs each, and place on a small cookie tray. Chill in the fridge for at least three hours (overnight would be great!).
- Once the bites are chilled, store them in the fridge or freezer until serving. Enjoy!!
