Oreo Stuffed Chocolate Chip Cookies (vegan)
Day three of this year's cookie challenge is something that I tried out a while ago. They were delicious but oddly shaped, so it took a couple more times to get them right. Here they are - Oreo stuffed chocolate chip cookies!
The chocolate chip cookie recipe for these guys is super similar to my vegan chocolate chip cookies (though not quite as fantastic I must say - check them out!!) The base is vegan butter (I normally use Earth Balance or Country Crock), but these don't have almond butter in them like my others do. I also included a flax egg in this dough, which you won't find in my classic choc chip cookies.
This dough is super fluffy and light, making the shape of the Oreo show through a bit when the cookies are baking, but the surface will even out as they cool. Because the cookies each need more dough than usual, this recipe also only makes 10-12 cookies, but they're so filling!
You could use any type of Oreo that you like inside these. Double stuffed or extra cream would be great, and another flavor would add a twist. Overall, these are super easy and customizable.

Oreo Stuffed Chocolate Chip Cookies
Makes 10-12 cookies
Ingredients
- 3/4 cup of cold vegan butter, cubed
- 3/4 cup brown sugar
- 2 Tbs granulated sugar
- 2 Tbs maple syrup
- 1 tsp vanilla
- 1 flax egg (1 Tbs flax + 2.5 Tbs water, allowed to set and gel)
- 2-1/3 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup choc chips
- 10-12 Oreo cookies
Directions
- Preheat the oven to 350 degrees.
- In a medium sized mixing bowl, beat together the butter and both sugars until creamy. Once the mixture is smooth, gently beat in the syrup, vanilla, and "egg".
- To the wet ingredients, add 1 cup of the flour, along with the baking soda and salt. Beat in slowly.
- Add in the rest of the flour, beat until smooth, and then repeat with the chocolate chips.
- On a greased cookie sheet, place down small spoonfuls of dough into circles, then gently press an Oreo cookie on top. With a larger spoonful of dough, cover the top and sides of the Oreo to create a dome (pictured above).
- Bake the cookies for 15-18 minutes until the edges begin to turn golden and a toothpick inserted in the cookie comes out clean.
- Give the cookies 5-10 minutes to cool, and then enjoy!
